Chicken Fajita Rice Bake allows you to use fajita meat for more than just fajitas. Serve as a side, entree, or as a part of your mexican themed salad bar.




Basic Recipe Ingredients:

  • 1 #2.5 can Gage Spanish Rice Spice
  • 3 qts Salsa
  • 1 #10 can Whole Kernel Corn, Drained
  • 3 qts Water
  • 2 lbs White Rice
  • 8 lbs Cooked Fajita Meat or Diced Chicken
  • 1 /2 lbs Shredded Cheddar Cheese
  • 4 cups Corn or Tortilla Chips

Basic Recipe Directions:
"

  1. Combine all ingredients except cheese and chips in a suitable container.
  2. Bring to a boil, stirring occassionally.
  3. Once boiling, transfer to a steamtable pan, cover with foil, and bake in a 400¦ oven for 35 minutes or until rice is done.
  4. Remove foil, stir gently, and sprinkle with chips and cheese before serving.
